We integrate this single origin cocoa butter with certified organic cane sugar and goat’s milk powder to create real, bean-to-bar white chocolate. We add Davao, Philippines cocoa nibs to the back of the bar–the cocoa nibs are from the same batch of beans that we use to make the bar itself, so in just one bite you experience the entire production and sourcing story. We were the first chocolate makers to ever create a single-origin chocolate bar using cocoa beans from the Philippines. We began doing so in February 2009 after working for over a year and a half to directly source cocoa beans from this exclusive and exotic region of Davao. Since we began our direct trade relationship with Peter Cruz and the Davao cocoa farmers, the quality ofthe bean and post-harvest practices continue to improve, resulting in extraordinary chocolate.
